1/3 cup egg whites
1/2 cup sugar
3/4 cup semi-sweet chocolate chips
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1 cup chopped walnuts
Preheat oven to 350 F. Oven rack should be on lower part of oven, near bottom or second from bottom. Cover two baking sheets with parchment paper. In a small stainless bowl, beat egg whites, slowly combining with sugar, until the egg whites are stiff. Using a spatula mix the vanilla, melted chocolate, chopped nuts and almond extract with the stiff whites. Drop spoonfuls of batter on parchment paper.
Bake for 11-16 minutes or until tops are dry to touch. Cool before removing with spatula. Makes about 1 1/2 dozen cookies that go great with any coffee.
